Every detail, except the paint on the walls, the fridge, and the rug, was meticulously transported and assembled.

With a community-driven approach, the Pop Up was brought to life in just two days. Friends and artists joined forces to lay down the rug, install the fridge, set up shelving, and organize merchandise. One of the standout features was a plushie wall, an art piece created from stuffed animals sourced from friends, eBay, and yard sales. Artist Jon Burgerman added his touch with a spray-painted pickle mural, enhancing the unique, artistic atmosphere of Grillo's Pickle Paradise.

Surprises and Community Engagement

Reflecting on their first Pop Up experience, Mellow was pleasantly surprised by the enthusiastic response. "People would walk by and say, 'Oh my god, I love these pickles!' It was fun to see the excitement." The Lower East Side location at 2 Rivington Street, reminiscent of the Orchard Street Pickle Fest, allowed Grillo's to reconnect with the community. They offered free food, collaborating with Burger Head for burgers and hot dogs, creating a lively, welcoming environment.

The Pop Up not only brought in new customers but also rekindled friendships with local residents and store owners. "Even though we're only here for two weeks, people are thrilled to see us back," he shared. "It's a good time."

Returning for More

Inspired by the success and joy of their first Pop Up, Grillo's Pickles decided to return for a second year. Mellow highlighted the space's advantages: it's turnkey, cost-effective, and perfect for their needs. "It's small but intimate, allowing us to hang out with friends and community members," he said.

Grillo's main sales channel remains grocery stores, with their pickles available in over 26,000 stores nationwide. Yet, the Pop Up offers a unique opportunity to showcase the brand's personality and creativity. "People get excited about our limited-edition items," he noted. Custom, hand-drawn pants and exclusive pickle jars give customers a glimpse into the brand's artistic side.

Working with Parasol Projects has been seamless for Grillo's. "It's turnkey. I show up, get the key, and we're good to go," the Mellow said.
